Ingredients
- 1 36 oz Porterhouse steak
- 5 tablespoons Vegetable oil
- 4 oz Butter
- 10 sprigs Thyme
- 6 Garlic gloves
- To taste Salt and pepper
Directions
- 30 minutes prior to cooking, take the porterhouse out of refrigerator and let it sit out at room temperature.
- 15 minutes prior to cooking, place cast iron skillet over low heat on stove.
- When ready to begin cooking, season each side of the porterhouse with salt and pepper.
- Add vegetable oil to the cast iron skillet and turn up the heat to medium high.
- Once oil starts to shimmer, place porterhouse in skillet.
- Sear for 5-6 minutes. Do not move the porterhouse during this time. Allow sear to build a good crust.
- Flip porterhouse and sear for 5-6 minutes
- Add butter, thyme and garlic, and baste the steak for 3-4 minutes.
- Remove from skillet and let rest for 5 minutes before slicing.
