- Makes 1 9" cheesecake
Yummy! What could possibly be more fun than a cheesecake with a Fruity Pebbles? This is the perfect cheesecake for any occasion.

Ingredients
Crust
- 12 oz Nilla wafers (crushed)
- 6 oz Melted butter
Filling
- 3 lbs Cream cheese (softened)
- 2 cups Sugar
- 2 each Vanilla bean (scraped)
- 12 oz Sour cream
- 2 tbsp Lemon juice
- 1.5 cups Fruity Pebbles (crushed)
- 5 each Eggs (whole)
Directions
-Mix the Nilla wafers with the butter.
-Spread the mixture evenly in a 9” pan.
-Beat the cream cheese, sugar and vanilla bean innards in a mixer using a paddle attachment.
-Add the sour cream and lemon juice while continuing to mix.
-Add the eggs one at a time on a low speed until completely blended.
-Pour into the pan.
-Bake in a no fan oven at 250 degrees in a water bath. This will take roughly 1 hour and 40 minutes depending on the oven.
-When finished, allow to cool COMPLETELY at room temperature.
-Refrigerate before cutting with a very sharp and hot knife.
-Sprinkle fresh Fruity Pebbles over the top before serving and add a side of melted vanilla ice cream as a sauce.
