We added it to our menu because it’s a delicious and nutritious option that meets you at the crossroads between a meal and a snack. We start with a toasted slice of naturally-leavened rustic sourdough before layering on a schmear of mashed avo, pillowy sheep’s milk feta, organic pea shoots, shaved watermelon radish, and a little Calabrian chili oil to top it all off.
Each component in the dish plays a unique role in creating harmony between the flavors and textures, taking it a step further than your typical avocado toast. Ingredients
Avocado Mash
- 1 avocado, flesh only
- 1/2 tsp salt
- 1 tsp lemon juice
Toast & Toppers
- 2 slices sourdough bread
- 1/2 cup avocado mash (above)
- 1/2 small orange, segmented
- 1 Tbsp feta cheese crumbles
- 1/2 oz pea shoots
- 1 oz watermelon radish, julienned
- 1 tsp hemp seed, toasted
- 1 tsp Calabrian chili oil
Directions
Avocado Mash
- Fork-smash all ingredients together until combined.
Assembly
- Toast sourdough bread.
- Spread avocado mash over each slice and cut in halves. Arrange on plate.
- Place orange segments over each, followed by feta cheese, pea shoots, and watermelon radish.
- Drizzle Calabrian chili oil all over.
- Garnish with toasted hemp seed.
